Vegetarian Potato…
Ingredients
  • 4 large potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 1/4 cup half-and-half cream

Steps
  1. In a large pot over medium heat, melt butter. Add onions and garlic; cook and stir until tender.
  2. Stir in potatoes, flour, vegetable broth, thyme and pepper. Bring to a boil then reduce heat to low; simmer for 15 minutes or until potatoes are tender.
  3. Stir in cream. Simmer for 5 minutes longer.
  4. Serve hot.
