Vegetarian Pho So…
Ingredients
  • 1 onion, sliced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 6 cups vegetable broth
  • 2 tablespoons soy sauce
  • 2 teaspoons brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute.
  2. Add the vegetable broth, soy sauce, brown sugar, coriander, cinnamon, and cayenne pepper (if using). Bring to a boil.
  3. Reduce heat to low and simmer for 20 minutes.
  4. Serve hot with desired toppings.
