Vegetarian Minest…
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3/4 cup green beans, cut into 1/2-inch pieces
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 4 cups vegetable broth
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon salt

Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots and celery. Cook for 5 minutes.
  3. Add the green beans and cook for another 5 minutes.
  4. Stir in the tomatoes with their juice, vegetable broth and cannellini beans.
  5. Bring to a boil then reduce heat to low and simmer for 20 minutes.
  6. Stir in the basil, oregano and salt. Simmer for 5 more minutes.
  7. Serve hot.
