Vegetarian Fajita…
Ingredients
  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 3 cups cooked quinoa or brown rice
  • 2 cups cooked black beans or pinto beans

Steps
  1. Heat olive oil in a large skillet over medium high heat. Add bell peppers, onion and garlic; cook until vegetables are tender and lightly browned, about 5 minutes. Stir in chili powder, cumin and smoked paprika; season with salt and pepper to taste. Cook for an additional minute.
  2. Divide cooked quinoa or brown rice among four bowls. Top with cooked vegetables, black beans or pinto beans.
  3. Serve immediately.
