Vegetarian Chili …
Ingredients
  • 4 bell peppers
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes with green chilies

Steps
  1. Preheat oven to 375°F. Cut the tops off of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to combine.
  4. Add the black beans, kidney beans, and diced tomatoes with green chilies. Simmer for 10 minutes.
  5. Fill each bell pepper with chili mixture. Cover baking dish with foil.
  6. Bake for 30 minutes or until peppers are tender.
  7. Serve warm.
