Vegetarian Chili …
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, minced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups cooked black beans or 1 (15-ounce) can black beans, rinsed and drained
  • 3 cups cooked pinto beans or 1 (15-ounce) can pinto beans, rinsed and drained

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the bell peppers and jalapeno (if using) and cook for another 5 minutes.
  3. Stir in the cumin, chili powder, smoked paprika and cayenne pepper (if using). Cook for 1 minute.
  4. Add the black beans and pinto beans. Cook until heated through.
  5. To assemble burritos: Place a few spoonfuls of bean mixture onto each tortilla. Top with desired toppings such as lettuce, tomatoes, cheese, salsa or avocado.
  6. Roll up each burrito and serve.
