Vegetarian Chili …
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 jalapeno pepper, seeded and diced (optional)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes with green chilies, undrained
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • Salt and pepper to taste

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the bell peppers and jalapeno pepper (if using) and cook for another 5 minutes.
  2. Add the black beans, kidney beans, tomatoes with green chilies, tomato sauce, chili powder, cumin, salt and pepper. Stir to combine.
  3. Bring to a boil then reduce heat to low. Simmer for 30 minutes or until everything is heated through.
  4. Serve in bowls with desired toppings.
