- 2 cups cooked brown rice
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 2 tablespoons olive oil
- In a large skillet over medium heat, heat the olive oil. Add the bell pepper, corn, and onion to the skillet and sauté for 5 minutes.
- Add the cooked brown rice and black beans to the skillet. Cook for an additional 5 minutes, stirring occasionally.
- Serve in individual bowls.
