Vegetarian Burrit…
Ingredients
  • 2 cups cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 cup corn kernels
  • 1/4 cup diced red onion
  • 2 tablespoons olive oil

Steps
  1. In a large skillet over medium heat, heat the olive oil. Add the bell pepper, corn, and onion to the skillet and sauté for 5 minutes.
  2. Add the cooked brown rice and black beans to the skillet. Cook for an additional 5 minutes, stirring occasionally.
  3. Serve in individual bowls.
