Ingredients
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups sliced carrots
  • 2 cups sliced celery
  • 3/4 cup uncooked wild rice blend
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme leaves
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Steps
  1. In a large saucepan, heat oil over medium heat. Add onion, garlic, carrots and celery; cook for 5 minutes.
  2. Stir in wild rice blend, broth, thyme leaves, pepper and garlic powder.
  3. Bring to a boil; reduce heat to low. Simmer for 40 minutes or until vegetables and rice are tender.
  4. Serve warm.
