- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, minced
- 2 cups sliced carrots
- 2 cups sliced celery
- 3/4 cup uncooked wild rice blend
- 4 cups vegetable broth
- 1 teaspoon dried thyme leaves
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- In a large saucepan, heat oil over medium heat. Add onion, garlic, carrots and celery; cook for 5 minutes.
- Stir in wild rice blend, broth, thyme leaves, pepper and garlic powder.
- Bring to a boil; reduce heat to low. Simmer for 40 minutes or until vegetables and rice are tender.
- Serve warm.
