Vegetable Summer …
Ingredients
  • 1/2 cup cooked vermicelli noodles
  • 1/4 cup shredded carrots
  • 1/4 cup shredded cucumber
  • 1/4 cup bean sprouts
  • 1/4 cup chopped cilantro
  • 8-10 rice paper wrappers

Steps
  1. Fill a large bowl with warm water.
  2. Submerge one wrapper in the water until it's soft and pliable, about 30 seconds.
  3. Lay the wrapper on a flat surface.
  4. Add 1 tablespoon of noodles, carrots, cucumber, bean sprouts and cilantro to the center of the wrapper.
  5. Fold the sides of the wrapper over the filling.
  6. Starting at one end, roll up the wrapper tightly around filling.
  7. Repeat with remaining wrappers and filling
