Ingredients
  • 1/2 lb. rice noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, julienned
  • 1 yellow onion, sliced
  • 1/2 cup broccoli florets
  • 1/4 cup snow peas
  • 4 shiitake mushrooms, sliced
  • 3 tablespoons soy sauce

Steps
  1. Soak the rice noodles in hot water for 30 minutes. Drain and set aside.
  2. Heat the oil in a large skillet over medium-high heat. Add the garlic and stir-fry for 30 seconds.
  3. Add the bell pepper and onion and stir-fry for 2 minutes.
  4. Add the broccoli, snow peas, mushrooms, and soy sauce and stir-fry for 3 minutes.
  5. Add the noodles and toss to combine. Cook until heated through, about 3 minutes.
  6. Serve hot.
