- 1/2 lb. rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 red bell pepper, julienned
- 1 yellow onion, sliced
- 1/2 cup broccoli florets
- 1/4 cup snow peas
- 4 shiitake mushrooms, sliced
- 3 tablespoons soy sauce
- Soak the rice noodles in hot water for 30 minutes. Drain and set aside.
- Heat the oil in a large skillet over medium-high heat. Add the garlic and stir-fry for 30 seconds.
- Add the bell pepper and onion and stir-fry for 2 minutes.
- Add the broccoli, snow peas, mushrooms, and soy sauce and stir-fry for 3 minutes.
- Add the noodles and toss to combine. Cook until heated through, about 3 minutes.
- Serve hot.
