- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 carrots, diced
- 1 cup broccoli florets
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
- Add the bell pepper, carrots and broccoli to the skillet and cook until tender-crisp, about 5 minutes.
- In a small bowl whisk together the peanut butter, soy sauce and honey. Pour over the vegetables in the skillet and stir to combine.
- Cook for an additional 2-3 minutes or until sauce is heated through.
- Serve over cooked rice or noodles.
