Ingredients
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 carrots, diced
  • 1 cup broccoli florets
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey

Steps
  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the bell pepper, carrots and broccoli to the skillet and cook until tender-crisp, about 5 minutes.
  3. In a small bowl whisk together the peanut butter, soy sauce and honey. Pour over the vegetables in the skillet and stir to combine.
  4. Cook for an additional 2-3 minutes or until sauce is heated through.
  5. Serve over cooked rice or noodles.
