Vegetable Stew
Ingredients
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 2 potatoes, peeled and cubed
  • 1 cup vegetable broth
  • 1 (14.5 oz) can diced tomatoes with juice

Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened.
  3. Stir in the carrots, celery and bell pepper.
  4. Cook until vegetables are tender.
  5. Add the potatoes and vegetable broth.
  6. Bring to a boil then reduce heat to low and simmer for 15 minutes.
  7. Stir in the tomatoes with juice.
  8. Simmer for an additional 10 minutes or until potatoes are tender.
