Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 2 cups cooked rice
  • Fresh parsley for garnish

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened and fragrant.
  2. Add the vegetable broth, oregano, red pepper flakes, salt, and black pepper. Bring to a boil.
  3. Reduce heat to low and add the carrots, celery and tomatoes. Simmer for 15 minutes.
  4. Stir in the kidney beans and cooked rice. Simmer for an additional 5 minutes.
  5. Serve garnished with fresh parsley.
