Ingredients
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 carrots, peeled and diced
  • 4 celery stalks, diced
  • 2 potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 6 cups vegetable broth or stock
  • 1 (15-ounce) can black beans, drained and rinsed

Steps
  1. Heat the oil in a large pot over medium heat. Add the onions and garlic, stirring often until fragrant and softened.
  2. Add the carrots, celery, potatoes, thyme, oregano and paprika. Stir to combine.
  3. Pour in the vegetable broth or stock. Bring to a boil over high heat then reduce to low heat. Simmer for 15 minutes or until vegetables are tender.
  4. Stir in the black beans. Simmer for an additional 5 minutes or until heated through.
  5. Serve warm with crusty bread or crackers.
