Ingredients
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon dried thyme
  • 6 cups vegetable broth
  • 2 potatoes, peeled and cubed
  • 1 zucchini, diced
  • 1 cup frozen corn kernels
  • 1/2 cup frozen peas

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the garlic, onion, carrot and celery and cook until softened, about 5 minutes.
  2. Add the oregano and thyme and stir to combine.
  3. Pour in the vegetable broth and bring to a boil. Add the potatoes, zucchini and corn. Reduce heat to low and simmer for 15 minutes.
  4. Stir in the peas and cook for an additional 5 minutes.
  5. Serve hot.
