Ingredients
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 4 cups vegetable broth or stock
  • 3 cups chopped kale leaves or spinach leaves

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
  2. Add the carrots and celery and cook for 5 minutes.
  3. Stir in the tomatoes with juice, thyme, oregano, vegetable broth or stock and bring to a boil.
  4. Reduce heat to low and simmer for 20 minutes.
  5. Stir in the kale or spinach leaves and cook for 5 minutes more.
  6. Season with salt and pepper to taste before serving.
