- 1 red onion, cut into wedges
- 1 bell pepper, cut into chunks
- 1 zucchini, cut into chunks
- 2 cups mushrooms, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat oven to 375°F.
- On a baking sheet, combine the onion wedges, bell pepper chunks, zucchini chunks and mushrooms.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 20 minutes or until vegetables are tender.
- Thread the vegetables onto skewers.
- Serve warm.
