Vegetable Skewers
Ingredients
  • 1 red onion, cut into wedges
  • 1 bell pepper, cut into chunks
  • 1 zucchini, cut into chunks
  • 2 cups mushrooms, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps
  1. Preheat oven to 375°F.
  2. On a baking sheet, combine the onion wedges, bell pepper chunks, zucchini chunks and mushrooms.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Bake for 20 minutes or until vegetables are tender.
  5. Thread the vegetables onto skewers.
  6. Serve warm.
