- 1/2 cucumber, diced
- 1/2 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon white vinegar
- 1 teaspoon dill weed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 bell peppers, cut into 1-inch pieces
- 2 zucchini, cut into 1-inch pieces
- In a medium bowl, mix together the cucumber, Greek yogurt, garlic, olive oil, white vinegar, dill weed, salt and pepper.
- Thread the bell peppers and zucchini onto skewers.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Grill the skewers for 8 to 10 minutes or until vegetables are tender.
- Serve with tzatziki sauce.
