Vegetable Skewers…
Ingredients
  • 1/2 cucumber, diced
  • 1/2 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon white vinegar
  • 1 teaspoon dill weed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 bell peppers, cut into 1-inch pieces
  • 2 zucchini, cut into 1-inch pieces

Steps
  1. In a medium bowl, mix together the cucumber, Greek yogurt, garlic, olive oil, white vinegar, dill weed, salt and pepper.
  2. Thread the bell peppers and zucchini onto skewers.
  3. Preheat an outdoor grill for high heat and lightly oil the grate.
  4. Grill the skewers for 8 to 10 minutes or until vegetables are tender.
  5. Serve with tzatziki sauce.
