Ingredients
  • 1/2 cup olive oil
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 red pepper, diced
  • 1 zucchini, diced

Steps
  1. Heat the oil in a large skillet over medium heat.
  2. Add the garlic, onion, carrots, celery and red pepper.
  3. Cook for 5 minutes until vegetables are tender.
  4. Add the zucchini and cook for an additional 3 minutes.
  5. Serve warm.
