- 1/2 cup olive oil
- 3 cloves garlic, minced
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 1 red pepper, diced
- 1 zucchini, diced
- Heat the oil in a large skillet over medium heat.
- Add the garlic, onion, carrots, celery and red pepper.
- Cook for 5 minutes until vegetables are tender.
- Add the zucchini and cook for an additional 3 minutes.
- Serve warm.
