Vegetable Salad
Ingredients
  • 1 head romaine lettuce, washed and torn into bite-sized pieces
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • salt and pepper to taste

Steps
  1. In a large bowl, combine the lettuce, tomatoes, cucumber and onion.
  2. In a separate bowl, whisk together the olive oil and red wine vinegar.
  3. Pour the dressing over the salad and toss to combine.
  4. Season with salt and pepper to taste.
  5. Serve immediately.
