Vegetable Roll
Ingredients
  • 1/4 cup cooked brown rice
  • 1/4 cup grated carrots
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped cucumber
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 sheets of Nori

Steps
  1. Mix the cooked brown rice, grated carrots, chopped bell peppers, and chopped cucumber together in a bowl.
  2. Heat the sesame oil in a skillet over medium heat until it is hot.
  3. Add the vegetable mixture to the skillet and cook for 5 minutes, stirring occasionally.
  4. Add the soy sauce and stir to coat all of the vegetables with it.
  5. Lay one sheet of Nori on a flat surface and spread half of the vegetable mixture onto it. Roll up the Nori into a roll. Repeat with second sheet of Nori.
  6. Cut each roll into 4-5 pieces and serve.
