Vegetable Quinoa …
Ingredients
  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red pepper, diced
  • 1 large carrot, diced
  • 1/2 teaspoon ground ginger
  • 2 cups vegetable broth or water
  • 1/4 cup soy sauce or tamari sauce
  • 2 cups frozen mixed vegetables

Steps
  1. Rinse the quinoa in a fine mesh strainer. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes until softened. Add the red pepper and carrot and cook for another 5 minutes.
  2. Add the ground ginger, quinoa, vegetable broth or water, and soy sauce or tamari sauce. Bring to a boil then reduce heat to low and simmer covered for 15 minutes.
  3. Stir in the frozen mixed vegetables and cook for another 5 minutes until heated through.
  4. Serve warm.
