Vegetable Quinoa …
Ingredients
  • 1/2 cup quinoa
  • 1/2 cup vegetable broth
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped bell pepper
  • 1/8 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil over medium-high heat.
  2. Reduce the heat to low and cover. Simmer for 15 minutes.
  3. Add the tomatoes, red onion, bell pepper, garlic powder, salt and pepper. Stir to combine.
  4. Cover and cook for an additional 10 minutes or until all of the liquid is absorbed.
  5. Remove from the heat and let stand, covered, for 5 minutes before serving.
