- 1/2 cup quinoa
- 1/2 cup vegetable broth
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped bell pepper
- 1/8 teaspoon garlic powder
- Salt and pepper to taste
- In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil over medium-high heat.
- Reduce the heat to low and cover. Simmer for 15 minutes.
- Add the tomatoes, red onion, bell pepper, garlic powder, salt and pepper. Stir to combine.
- Cover and cook for an additional 10 minutes or until all of the liquid is absorbed.
- Remove from the heat and let stand, covered, for 5 minutes before serving.
