Vegetable Platter
Ingredients
  • 1 head of cauliflower
  • 1 head of broccoli
  • 1 red onion
  • 1 bell pepper
  • 1 cup of cherry tomatoes
  • 2 tablespoons olive oil

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cut the cauliflower and broccoli into florets.
  3. Chop the red onion and bell pepper into small pieces.
  4. Place the vegetables on a baking sheet.
  5. Drizzle with olive oil and season with salt and pepper to taste.
  6. Bake for 20 minutes, stirring occasionally.
  7. Serve warm.
