Ingredients
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 3 cups fresh spinach leaves

Steps
  1. In a large pot over medium heat, sauté the onion and garlic until softened.
  2. Add the bell pepper, celery, and carrots. Cook for 5 minutes.
  3. Stir in the tomatoes and beans. Pour in the vegetable broth.
  4. Bring to a boil, then reduce heat to low. Simmer for 15 minutes.
  5. Stir in the spinach leaves and cook until wilted.
  6. Serve hot.
