- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 stalks celery, diced
- 2 carrots, diced
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 4 cups vegetable broth
- 3 cups fresh spinach leaves
- In a large pot over medium heat, sauté the onion and garlic until softened.
- Add the bell pepper, celery, and carrots. Cook for 5 minutes.
- Stir in the tomatoes and beans. Pour in the vegetable broth.
- Bring to a boil, then reduce heat to low. Simmer for 15 minutes.
- Stir in the spinach leaves and cook until wilted.
- Serve hot.
