Vegetable Lentil …
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3/4 cup red lentils
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Stir in onion, garlic, carrots and celery. Cook and stir until vegetables are tender.
  3. Stir in the lentils and broth. Bring to a boil.
  4. Reduce heat to low and simmer for 30 minutes.
  5. Stir in the tomatoes with juice and season with basil and oregano.
  6. Simmer for an additional 15 minutes or until lentils are tender.
