Vegetable Lasagna
Ingredients
  • Lasagna noodles
  • Tomato sauce
  • Mushrooms
  • Spinach
  • Onion
  • Garlic
  • Mozzarella cheese

Steps
  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package instructions.
  3. In a medium saucepan, heat tomato sauce over medium heat until warmed through.
  4. In a large skillet, sauté mushrooms, spinach, onion and garlic until softened.
  5. Spread a thin layer of tomato sauce in the bottom of a 9x13 inch baking dish.
  6. Layer lasagna noodles on top of the tomato sauce.
  7. Top with a layer of sautéed vegetables and sprinkle with mozzarella cheese.
  8. Repeat layering process until all ingredients are used up, ending with a layer of mozzarella cheese on top.
  9. Bake for 30 minutes or until cheese is melted and bubbly.
