Vegetable Lasagna…
Ingredients
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, grated
  • 1/4 cup parmesan cheese, grated
  • 1/2 teaspoon garlic powder
  • 1/4 cup fresh parsley, chopped
  • 1 (10 ounce) package frozen spinach, thawed and drained well
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Steps
  1. Preheat oven to 375 degrees F.
  2. In a medium bowl combine ricotta, mozzarella and parmesan cheeses.
  3. Add garlic powder, parsley and spinach. Mix until combined.
  4. Spread 1/3 cup of the cheese mixture on each lasagna noodle.
  5. Roll up each noodle and place seam side down in a 9x13 inch baking dish.
  6. Sprinkle with salt and pepper.
  7. Bake for 25 minutes or until bubbly.
