Vegetable Kebabs
Ingredients
  • 2 bell peppers, diced
  • 1 large onion, diced
  • 2 zucchini, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine bell peppers, onion, zucchini and olive oil. Season with salt and pepper.
  3. Thread vegetables onto skewers. Place on a baking sheet.
  4. Bake in preheated oven for 20 minutes, or until vegetables are tender.
  5. Serve warm.
