- 1/2 cup grated carrot
- 1/2 cup grated potato
- 1/2 cup corn kernels
- 1/4 cup chopped onion
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- In a medium bowl, combine the grated carrot, potato, corn kernels and onion.
- In a separate bowl, mix together the flour, baking powder, garlic powder, salt and pepper.
- Add the dry ingredients to the vegetables and mix until everything is coated.
- Heat oil in a large skillet over medium heat.
- Drop spoonfuls of the vegetable mixture into the hot oil.
- Fry until golden brown on both sides. Serve warm.
