Vegetable Fritters
Ingredients
  • 1/2 cup grated carrot
  • 1/2 cup grated potato
  • 1/2 cup corn kernels
  • 1/4 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. In a medium bowl, combine the grated carrot, potato, corn kernels and onion.
  2. In a separate bowl, mix together the flour, baking powder, garlic powder, salt and pepper.
  3. Add the dry ingredients to the vegetables and mix until everything is coated.
  4. Heat oil in a large skillet over medium heat.
  5. Drop spoonfuls of the vegetable mixture into the hot oil.
  6. Fry until golden brown on both sides. Serve warm.
