- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 onion, sliced into strips
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and black pepper to taste
- Heat the olive oil in a large skillet over medium-high heat.
- Add the bell peppers, onion, garlic, chili powder and cumin. Cook for 5 minutes.
- Add salt and black pepper to taste.
- Cook until vegetables are tender.
- Serve warm in tortillas or over a bed of lettuce.
