Vegetable Fajitas
Ingredients
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 onion, sliced into strips
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste

Steps
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the bell peppers, onion, garlic, chili powder and cumin. Cook for 5 minutes.
  3. Add salt and black pepper to taste.
  4. Cook until vegetables are tender.
  5. Serve warm in tortillas or over a bed of lettuce.
