Vegetable Curry
Ingredients
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric powder
  • 2 tablespoons olive oil
  • 3 cups vegetables of choice (such as potatoes, carrots, bell peppers and/or cauliflower), chopped into bite-sized pieces
  • 1 can (14.5 ounce) diced tomatoes with their juices

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the curry powder, cumin, coriander, garam masala and turmeric. Cook for 1 minute.
  3. Add the vegetables and stir to coat with the spices.
  4. Pour in the diced tomatoes with their juices and bring to a simmer. Cover and cook until the vegetables are tender, about 10 minutes.
  5. Serve over cooked rice or quinoa.
