Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger paste
  • 1 teaspoon curry powder
  • 2 tablespoons tomato paste
  • 2 cups vegetable broth
  • 1/2 cup coconut milk
  • 1 small sweet potato, peeled and diced
  • 1 large carrot, peeled and diced

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
  2. Stir in the ginger paste, curry powder, and tomato paste. Cook for 1 minute.
  3. Pour in the vegetable broth and coconut milk. Bring to a boil.
  4. Add the sweet potato and carrot. Reduce heat to low and simmer for 25 minutes or until vegetables are tender.
  5. Serve hot with desired toppings.
