Vegetable Biryani
Ingredients
  • 1 cup Basmati Rice
  • 2 tablespoons Ghee or Clarified Butter
  • 1 teaspoon Cumin Seeds
  • 3 cloves Garlic, crushed
  • 1 teaspoon Ginger, grated
  • 1 onion, diced
  • 2 cups Vegetables of your choice (carrots, peas, potatoes, etc.)
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Garam Masala Powder
  • Salt to taste

Steps
  1. Wash the rice and soak it for 15 minutes.
  2. Heat the ghee in a pan and add cumin seeds. Let them splutter.
  3. Add garlic and ginger and sauté for a few seconds.
  4. Add onions and sauté until they turn golden brown.
  5. Add vegetables and sauté for a few minutes.
  6. Add turmeric powder, garam masala powder and salt to taste. Mix well.
  7. Add the soaked rice and mix well. Add 1 cup of water and bring it to a boil.
  8. Cover the pan with a lid and cook on low heat for about 15-20 minutes or until the rice is cooked through.
  9. Serve hot with raita or any other accompaniment of your choice.
