Vegan Udon Noodle…
Ingredients
  • 1/4 cup vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon red pepper flakes
  • 4 cups vegetable broth
  • 3 tablespoons rice vinegar
  • 2 tablespoons brown sugar

Steps
  1. Heat the vegetable oil in a large pot over medium heat. Add the garlic and ginger and cook for 1 minute.
  2. Add the sesame oil, soy sauce, and red pepper flakes and stir to combine.
  3. Pour in the vegetable broth, rice vinegar, and brown sugar. Bring to a boil.
  4. Reduce heat to low and simmer for 10 minutes.
  5. Strain the soup into a bowl. Serve hot with udon noodles.
