Vegan Tofu Tacos
Ingredients
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 14 ounces extra-firm tofu, drained and crumbled
  • 8-10 small flour or corn tortillas

Steps
  1. In a large skillet over medium heat, heat oil. Add onion and bell pepper and cook until softened, about 5 minutes. Add chili powder, garlic powder, cumin and salt. Stir to combine. Add tofu and cook until lightly browned, about 10 minutes.
  2. Warm tortillas in a dry skillet over medium heat for 1 minute per side.
  3. Divide tofu mixture among tortillas and top with desired toppings.
