Vegan Tikka Masala
Ingredients
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 red chili pepper, diced
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp tomato paste
  • 14 oz can coconut milk
  • 14 oz can chickpeas, drained and rinsed

Steps
  1. Heat a large skillet over medium heat. Add the olive oil and onion and sauté for 5 minutes.
  2. Add the garlic, ginger, chili pepper, garam masala, cumin and coriander. Sauté for 1 minute.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Pour in the coconut milk and bring to a simmer. Simmer for 10 minutes.
  5. Add the chickpeas and simmer for an additional 5 minutes until thickened.
  6. Serve with basmati rice or naan bread.
