Ingredients
  • 2 tablespoons coconut oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon Thai green curry paste
  • 1 can (14.5 ounces) full-fat coconut milk
  • 2 cups vegetable broth
  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 3 cups kale leaves, roughly chopped
  • Salt and pepper to taste

Steps
  1. Heat the coconut oil in a large pot over medium heat. Add the onion and cook until softened and translucent, about 5 minutes.
  2. Add the garlic and ginger and cook for an additional minute.
  3. Add the curry paste and stir to combine. Cook for an additional minute.
  4. Pour in the coconut milk and vegetable broth. Bring to a simmer.
  5. Add the sweet potatoes and simmer for 10 minutes or until the potatoes are tender.
  6. Stir in the kale leaves and cook for an additional 5 minutes or until wilted.
  7. Season with salt and pepper to taste.
  8. Serve hot.
