Ingredients
  • 1 tablespoon coconut oil
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons green curry paste
  • 1 can (14 oz) light coconut milk
  • 1/4 cup vegetable broth
  • 2 tablespoons soy sauce or tamari sauce
  • 3 cups cooked noodles of choice (rice noodles or soba noodles work great)

Steps
  1. Heat the coconut oil in a large skillet over medium heat. Add the bell pepper and onion and cook for about 5 minutes until softened.
  2. Add the garlic and curry paste to the skillet and stir for about 1 minute until fragrant.
  3. Pour in the coconut milk, vegetable broth and soy sauce. Bring to a simmer and let cook for about 10 minutes until slightly thickened.
  4. Add cooked noodles to the skillet and stir to combine. Let cook for another 2-3 minutes until heated through.
  5. Serve warm with desired toppings such as fresh herbs, chopped peanuts, lime wedges and extra chili flakes.
