Vegan Teriyaki To…
Ingredients
  • 1 block extra-firm tofu, drained and pressed
  • 1/4 cup vegan teriyaki sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 tablespoon olive oil
  • 2 cups cooked brown rice
  • 2 cups steamed broccoli florets

Steps
  1. Cut the tofu into cubes and place in a shallow bowl. Pour the teriyaki sauce over the tofu and mix to coat. Let marinate for 10 minutes.
  2. In a small bowl, mix together the garlic powder, ground ginger, and olive oil.
  3. Heat a large skillet over medium-high heat. Add the marinated tofu cubes and cook for 5 minutes, stirring occasionally until lightly browned.
  4. Add the garlic powder mixture to the pan and stir to coat. Cook for an additional 2 minutes or until fragrant.
  5. Divide the cooked brown rice among 4 bowls. Top with steamed broccoli florets and cooked teriyaki tofu cubes.
  6. Serve with your favorite side dishes.
