- 1 block extra-firm tofu, drained and pressed
- 1/4 cup vegan teriyaki sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1 tablespoon olive oil
- 2 cups cooked brown rice
- 2 cups steamed broccoli florets
- Cut the tofu into cubes and place in a shallow bowl. Pour the teriyaki sauce over the tofu and mix to coat. Let marinate for 10 minutes.
- In a small bowl, mix together the garlic powder, ground ginger, and olive oil.
- Heat a large skillet over medium-high heat. Add the marinated tofu cubes and cook for 5 minutes, stirring occasionally until lightly browned.
- Add the garlic powder mixture to the pan and stir to coat. Cook for an additional 2 minutes or until fragrant.
- Divide the cooked brown rice among 4 bowls. Top with steamed broccoli florets and cooked teriyaki tofu cubes.
- Serve with your favorite side dishes.
