Vegan Sweet Potat…
Ingredients
  • 1 cup mashed sweet potato
  • 1/2 cup vegan butter
  • 1/2 cup almond milk
  • 1/2 cup coconut sugar
  • 2 tablespoons ground flaxseed
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Steps
  1. Preheat oven to 375°F. Grease a 12-cup muffin tin with vegan butter.
  2. In a large bowl, combine mashed sweet potato, vegan butter, almond milk and coconut sugar. Mix until well combined.
  3. In a separate bowl, combine flaxseed, baking powder, baking soda, salt and cinnamon. Whisk together until well blended.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Divide batter evenly among 12 muffin cups. Bake for 18-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  6. Allow muffins to cool in the pan for 10 minutes before transferring to a cooling rack.
