Vegan Sweet Potat…
Ingredients
  • 2 sweet potatoes, cubed
  • 1/2 cup cooked quinoa
  • 1/4 cup diced onion
  • 1/3 cup diced red pepper
  • 1/4 cup diced celery
  • 1 tablespoon ground flaxseed
  • 2 tablespoons olive oil

Steps
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine sweet potatoes, quinoa, onion, red pepper, celery, flaxseed and oil. Mix until everything is evenly combined.
  3. Form the mixture into four patties and place on the prepared baking sheet.
  4. Bake in preheated oven for 30 minutes or until golden brown.
  5. Serve warm.
