- 2 sweet potatoes, cubed
- 1/2 cup cooked quinoa
- 1/4 cup diced onion
- 1/3 cup diced red pepper
- 1/4 cup diced celery
- 1 tablespoon ground flaxseed
- 2 tablespoons olive oil
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine sweet potatoes, quinoa, onion, red pepper, celery, flaxseed and oil. Mix until everything is evenly combined.
- Form the mixture into four patties and place on the prepared baking sheet.
- Bake in preheated oven for 30 minutes or until golden brown.
- Serve warm.
