- 12-14 rice paper wrappers
- 1/2 head of Napa cabbage, thinly sliced
- 1/2 head of red cabbage, thinly sliced
- 1 large carrot, grated
- 1/2 red bell pepper, julienned
- 1/2 cup cilantro leaves, chopped
- 1/4 cup mint leaves, chopped
- 1/4 cup basil leaves, chopped
- Soak one wrapper in warm water for 10-15 seconds until softened.
- Lay the wrapper flat on a cutting board and fill with 1 tablespoon each of the cabbage, carrot, bell pepper, cilantro, mint and basil.
- Fold the sides in towards the center and roll up tightly.
- Repeat with remaining wrappers and filling ingredients.
- Serve with peanut sauce.
